Fruit and Quinoa Salad + Yogurt Dressing

This colorful summer fruit salad is almost too pretty to eat.


Ingredient List

  • Small check mark in a circle icon 2 kiwis, peeled and sliced
  • Small check mark in a circle icon 1 cup blackberries
  • Small check mark in a circle icon 1 cup raspberries
  • Small check mark in a circle icon 1 cup sliced strawberries
  • Small check mark in a circle icon 2 avocados, peeled and chopped
  • Small check mark in a circle icon 2, 4-oz. containers of Annie’s Organic Whole Milk Summer Strawberry Yogurt
  • Small check mark in a circle icon 1 lime
  • Small check mark in a circle icon 10 small tender mint leaves
Preparation
  1. Rinse the quinoa in a fine mesh sieve until water runs clear and drain.
  2. Add water, quinoa, and salt in a pot. Bring to a boil.
  3. Cover and reduce heat to medium-low and simmer for 15 to 20 minutes, until water is absorbed.
  4. Let quinoa sit for 5 minutes. Uncover and fluff with a fork.
  5. Refrigerate quinoa until cool.
  6. Combine the cooled quinoa, kiwi, blackberries, strawberries, chopped avocado, yogurt, and lime juice and zest. Gently toss the ingredients to combine.
  7. Garnish with mint leaves.
  8. Serve immediately.
